Sylvain has a family estate of 37 acres of Chardonnay planted in a soil of clay, limestone and chalk, this is the old vines which is absolutely outstanding. It epitomises what real good Chablis should be. It is firm, lean, aromatic and complex with wonderful clean acidity showing outstanding minerality, freshness, purity and depth. Drink now or cellar for 3 to 5 years.
A relatively small vineyard quite elevated with an average vine age of 40 years and low yielding. This is a complete terroir expression of Chablis, nerve, vibrancy with racy mouth-watering acidity but yet with very good fruit weight and composure. 2018 provided another superb vintage from Chablis, low yields and a smaller production compared to other bigger vintages however we think it’s even better. More mineral, fuller body, in essence, a truer expression of Chablis. Cellar from 4 to 6 years.
Classical Chablis this one, dry, mineral, crisp and bursting with freshness, clarity of fruit and medium body but always in balance, not austere or over-done. Laffay is one of those producers that stays the course, his approach is very much hands off when it comes to winemaking he prefers the vineyard to do the talking and this is very much reflected in the wine. It will evolve over the next 4 years or so as it is a little young at present but it will be worth waiting for.
One of the small growers that has sustained the traditions and classical style of Chablis. A superb offering of riverbed pebbles, chalk, dry stone, superb minerality yet displaying incredible freshness, focus and flintiness. One of the great characteristics of Chablis is that it is able to offer full bodied wines with length, concentration and depth without having to result to any oak or oak aging. Enjoy now or over the next 2-3 years. Ideal with white meats, fish and shell fish.
