    One of the best examples that we have ever tried from NZ, again made from very low-yielding vineyards from Waipara and old vines, it has poise, elegance and wonderful texture, mainly from maturation on lees and indigenous yeast fermentation. It is dry with hints of petrol and spring flowers, generous with lovely middle palate and structure, once again like the Pinot Gris it is excellent with food.     Pyramid Valley situated in North Canterbury, in our view, establishes the top gear for New Zealand Pinot Noir. The owners have taken their inspiration from the great wines of Burgundy. Planted in slopes of clay limestone soils with a density of 12,000 vines per hectare which is incredibly high and managed pretty much biodynamical. No artificial pesticides, herbicides and the wine is made reflecting the vineyard and its terroir which means natural fermentation, no filtration, no artificial yeasts and no finings. As a result you have a medium to full bodied, soft and beautifully textured Pinot Noir that exhibits dry herbs, lavender, violets yet profound, pure and focused.
