Classical Chablis from an outstanding vintage, nerve, minerality yet racy acidity defines this wine but still manages to deliver outstanding frontal fruit and mouth appeal. Always unoaked, flinty, crisp, outstanding minerality, dry herbs and grinded stones. 2007 saw almost ideal conditions in Chablis. The wines are generally not overly alcoholic, with a good natural balance superb acidity, and tremendous focus and purity. Drinking very well now but something that should be enjoyed over the next 3-4 years.

Mosnier Chablis 2009

Excellent example of a producer that combines the best of traditional winemaking with a modern approach. Straight Chablis will drink beautifully over the next 4-5 years, a little young at the moment however it is loaded with fresh fruits, citrus and clean crisp acidity, very flinty and refreshing but it still has an under layer of opulence and intensity that eventually will come to the forefront within the next 4-5 years. A perfect example of wonderful Chablis. Drink now or cellar for 4-5 years.

Sylvian Mosnier is an aristocratic producer with a tradition of excellence in Chablis, this is his old vines that in many cases, represents excellent value for money, almost as good as a 1er Cru but without the price. His 2009 is composed, focused and tense with lovely minerality, softly textured and abundant in acidity. Something that will drink very well within the next 4-5 years due to its freshness and also even if it’s capable of aging, Chablis when young can be extremely refreshing and flinty and this is how it is! Flinty, perfumed, mineral and profound. Excellent when young but it will also develop for 4-5 years.

This is farmed on a .20 hectare planted in 1989. Cote de Lechet (1er Cru by nature) tends to be lighter and more subdued however more perfumed and suave than other 1er Cru. The 2009 is obviously still a baby but it already offers an array of minerals, freshness and mouth watering acidity. It will develop for at least 6-7 years and in the process it will broaden but yet it will always remain classic Chablis of great focus and purity. Cellar for 6-7 years.

Domaine Laffay produces small amounts of superb traditional Chablis which directly translates the essence of each vineyard into thrilling and mouth watering wines. His Grand Cru Vaudesir is taken from a .25 hectare vineyard planted in 1978. This is a masterpiece especially in a great vintage such as 2009. Vinification is very traditional and artisan making it one of the most terroir driven wines in the world. Yields are very restricted, harvest is done by hand and vinification and elevage is strictly traditional. Full bodied, tense with immense concentration and power, mineral, focused with nerve and pedigree. Will cellar for 10 years plus.

Classical Chablis this one, dry, mineral, crisp and bursting with freshness, clarity of fruit and medium body but always in balance, not austere or over done. Laffay is one of those producers that stays the course, his approach is very much hands off when it comes to winemaking he prefers the vineyard to do the talking and this is very much reflected in the wine. It will evolve over the next 4 years or so as it is a little young at present but I will be worth waiting for.

A Small producer that farms 15ha of vineyards spread across the AOCS of Petit Chablis and Chablis, including 3 Premier Cru sites. With the aid of his son Olivier, he makes traditionally styled Chablis, with great intensity of flavour, and true expression of the terroir. Lovely mineral and racy acidity with ample and generous middle palate, it also displays pure fruit flavours and freshness yet remaining flinty and clean, superb focus and purity, a little young at the moment but it will evolve beautifully over the next 5-8 years.
