A lot of you will be familiar with Simon Bize for being one of the top 10 producers in Burgundy. This single vineyard wine expresses the typical terroir of Burgundy which in vintages like 2007 have produced a classic style with racy acidity, soft velvety tannins and tremendous middle palate. The bouquet is loaded with Spring flowers and lavender, on the palate it is clean, subtle and juicy yet offers depth, concentration with superb aromas of truffle shavings and forrest undergrowth. This is starting to drink beautifully now but will also cellar for another 4-5 years.
